From MM: Bisque of Tomatoes with Basil

Bisque of Tomatoes with Basil
Serves 4
2 lb fresh tomatoes, peeled and quartered
1 medium onion, chopped
4 garlic cloves, crushed
1/4 cup basil, chopped
1/2 cup Asiago cheese, grated
salt and pepper

Heat the olive oil in a large stockpot. Add the onion and garlic; sauté for 2 minutes. Add the tomatoes and 1 cup of water. Simmer for 15 -20 minutes.

Puree the mixture using a hand held blender or food mill. Add the basil, salt and pepper to taste. Simmer another 3 minutes.

A crisp Sauvignon Blanc

Note: May be served hot or cold. Top with freshly grated Asiago cheese.
