From MM: Poached Pears in Red Wine

Poached Pears in Red Wine
Serves 4
4 pears
3 cups red wine
5 tbsp sugar
1 vanilla bean
1 cinnamon stick
zest of one lemon
fresh mint

Combine the wine, sugar, vanilla, cinnamon and lemon zest in a deep saucepan. Simmer for 5 minutes.

Peel the pears but do not remove the stems. Place the pears standing up in the saucepan so the simmering liquid covers them. Cook slowly for 30 minutes until tender.

Remove the pears to a serving dish and reduce the poaching liquid down to 1 cup, pour over the pears and chill for at least one hour. Serve with a sprig of fresh mint.
