Gourmet Mac & Cheese (Serves 3-4)

Ingredients

  • * 1 bacon, diced
  • * 1 1/2 tablespoon butter
  • * 1 tablespoon chopped onion
  • * 1 clove garlic, thinly sliced
  • * 1/4 red pepper, small dice
  • * 1 teaspoon Smoked paprika, cayenne, salt, pepper
  • * 2 tablespoon flour
  • * 1 1/4 cup milk and 1/4 cup of dark beer (or 1 1/2 cup milk)
  • * Chopped thyme (or pinch dried thyme), or herb of choice
  • * 1/4 cup aged cheddar, grated
  • * 1/4 cup Danish Blue cheese, crumbled
  • * 1/2 cup Fontina, grated
  • * Seasoning to taste
  • * 1 1/2 cups raw pasta, cooked in plenty of salted water

Directions

1. Render bacon in butter. When bacon is golden, sweat onion, pepper & garlic.

2. Stir in paprika (and cayenne, optional). Season with some salt & pepper.

3. Stir in flour to form a roux (a pasty thickening agent).

4. Temper in beer/milk slowly & bring to a simmer along with thyme.

5. Take off heat and slowly add in grated cheddar. Season to taste.

6. Stir in cooked pasta.

7. Optional: Sprinkle with a mix of bread crumbs, grated parmesan cheese and thyme

8. Optional: Top with sour cream mixed with either hot sauce or smoked paprika
